We opened in 2014 with one oven, a borrowed mixer and a list of forty neighbors who had promised to try our sourdough. Most of them still come in every Saturday.
For the first two years we baked through the night and sold out by ten. We learned which loaves people line up for, which ones they only try once, and that a warm cinnamon bun fixes most bad mornings.
Today there are nine of us. We still mill some of our own flour, we still bake everything on site, and we still know most customers by name. What changed is the kitchen: bigger ovens, a proper cold room and a small space where we teach bread classes on Sunday afternoons.
If you are curious how it all works, come by before 8am — the doors are open and the coffee is on.
