Luis and Carmen Ortega started Street Fold in 2019 with one truck and the birria recipe Luis’s grandmother made every Sunday in Guadalajara. The line got long fast.
How we cook
From the commissary at dawn to your hands at noon.
Birria goes into the pot with chiles, cinnamon and bay.
Roasted tomatillo, chile de árbol and avocado salsas, ground fresh.
Fresh masa for the tortilla press, all day long.
Pressed, griddled, filled and handed over hot.
