Sencha is the everyday green tea of Japan, and the first spring harvest is the sweetest of the year. The needle-shaped leaves are steamed right after picking, which keeps their bright color and fresh, grassy flavor.
Details
- First-flush steamed green tea
- Notes of snap peas, sweet grass and sea air
- Deep green leaves, pale jade cup
- Steeps two or three times
Brewing
Use 1 tsp per 6 oz of water at 160 to 170°F. Steep just 1 minute; longer steeps turn it bitter. Refill and steep 30 seconds for a second cup. A gooseneck kettle with a temperature setting makes this easy.

So fresh it tastes like spring. The brewing tip about 1 minute changed everything.
