A lightly oxidized oolong in the classic style, rolled into small green beads that open into whole leaves. The first cup is floral and buttery; later cups turn sweeter and softer. It is the tea our staff drinks most on slow afternoons.

Brewing
Use 2 tsp per 8 oz of water at 195°F. Steep 2 minutes, then add 30 seconds for each new cup. For a more traditional session, brew in a small pot with short 30-second steeps and plenty of refills.
